Ein Rafa is an Arab village located near Road No. 1 on the way to Jerusalem. The village's name is derived from the name of the spring, "Ein Rafa". The spring story is linked to the name of a French priest named "Rafa". According to local legend, the priest told the villagers to dig at a certain point where he promised they would find a spring. The residents did as he said and found the spring, which has since been called "Ein Rafa". The village is an "extension" of the nearby village of Soba. Three brothers from Soba founded Ein Rafa after the First World War. In 1948, the residents of Soba left the village and dispersed to nearby towns in East Jerusalem. After the Six-Day War, they received permission to reunite families and returned to Ein Refa.

Village Ein Rapha slides down the moderate slopes of the Kisallon Valley. The pastoral views remind Europa. You have to close your eyes and close your ears to break away from the bustling atmosphere of an authentic Arab village. Or, find a place in this cafe. In front of you will be revealed a world full of vineyards in which the sun has penetrated the breakthroughs between leaves, sows light and heat and embraces the blessed earthen. Order yourself an authentic Arabian coffee. There is a small bakery with various fresh pastries, and you will enjoy the atmosphere and beauty.

Rashta restaurant is a culinary phenomenon in the mountains of Jerusalem. First, it is a chef's restaurant. Second, field crops used by the restaurant chef Mr Renam Barhum usually come from nearby fields. Third, dishes from the authentic Arab cuisine of the Jerusalem area are prepared here. Fourth, "Rashta" means a traditional lentil and noodle dish.

Majda Restaurant is not just-food. It is a story. An eternal love story. The story of suffering, loyalty and devotion. An Arab boy named Yaakov worked at the Kiryat Ya'arim Hotel in the Jerusalem mountains. There he met Michal Burnes. She completed their duty in the IDF. Their mutual affection turned into love, and they were both ashamed. They knew that Jewish girls and Arab boys could not get married. The children's parents did not imagine that an Arab guy and a Jewish girl would be married. But they did. They grow up with their kids, live together in love, and open a home restaurant. Yaakov designed the place inspired by his wife, and Michal prepared simple and delicious food. The much-recommended dish is dumplings stuffed with minced lamb, a traditional Arab dish accompanied by a yoghurt and rice sauce, but Michal's kitchen is not overloaded with ingredients; there is no rice. The tase is in the simplicity of flavours and spices.

In restaurant Sanklish, they decided to be simple. It means to be genuine - it's who you are and what you are. The restaurant's name Shanklish means a traditional Arab dish ubiquitous in the north of Israel, Syria and Lebanon. However, the spice component is different and constitutes a local peculiarity that can be very different between the Upper Galilee and the Jerusalem mountains. Shanklish is made from ripe strained yoghurt, white cheese and seasoned with a unique spice blend as authentic to the region. Preparation of Sanklish takes two days, requires a lot of attention and patience. The professionalism is not to cross the fine line between sourness and vinegar and not turn a refined dish into something one cannot eat.
